Pick Sharpness when…

You don't know what you'll fight. Spider raids, blaze hunts, Wardens, Ender Dragon — Sharpness works on everything. Default choice for a general-purpose weapon.

Pick Smite when…

You're going on a Wither fight (it's Undead despite being a boss) or grinding zombies / skeletons / drowned for XP and loot. Smite V one-shots zombies even on hardest difficulty.
