Sharpness vs Smite
Minecraft 1.21.8. Java Edition values.
Verdict
Sharpness adds flat damage against any mob (+1 base, +0.5 per additional level). Smite hits Undead specifically much harder — Smite V deals +12.5 damage vs Undead, more than triple Sharpness V's +3. They're mutually exclusive, so pick based on what you fight most.
⚠ Mutually exclusive — can't apply both to the same item.

Pick Sharpness when…
You don't know what you'll fight. Spider raids, blaze hunts, Wardens, Ender Dragon — Sharpness works on everything. Default choice for a general-purpose weapon.
Pick Smite when…
You're going on a Wither fight (it's Undead despite being a boss) or grinding zombies / skeletons / drowned for XP and loot. Smite V one-shots zombies even on hardest difficulty.
